Can the Xbox 360 do 1080p using component cables ?

No. Component cables are capable of carrying the signal, and the Xbox 360 is capable of outputting that resolution, but the only way you get 1080p is if you're using DRM encumbered HDMI connections. The unrestricted component cables are limited to 1080i.
I hope that when people finally crack the 360 and make a modchip for it, they find a way to work around that.
