Size in Detail:

How to Keep Kitchen Knives Sharp:
- Sharpen your kitchen knives once each year with an electric sharpener for knives. An electric sharpener unbends a knife blade by removing small portions of its metal, which makes the knife sharp again. An option is to take your kitchen knives to a professional knife sharpener
- Run each knife over the edge of sharpening steel before each use to keep it sharp. Hold a knife at a 20-degree angle, and pull its blade across the sharpening steel
- Wash your kitchen knives by hand instead of in a dishwasher. Bumping around with other silverware and glass items can cause a knife to lose its sharp edge
- Cut and chop only food with kitchen knives. Using a kitchen knife for household tasks that do not involve food will make its blade dull faster than if it's used only on food
How to Buy Kitchen Knives:
- Determine what kinds of knives you need by thinking about how you cook. Some people enjoy knife sets because they're cost effective and give a wide variety of knives. Others prefer to pick and choose the knives they want. Whichever way you go, your kitchen should have three standard knives: a 3"-4" paring knife, an 8" Chef's knife and a 7"-10" slicer for carving meats
- Look for high-quality stainless steel blades that are rust resistant. Also, select knives whose stainless steel continues through the handle. The piece of stainless steel that the handle attaches to is called the tang. A full tang is important in a high-quality knife
- Choose a knife that fits well in your hand. If you're petite, an 8" chef's knife may feel too big; select a 6" instead. If your hands are larger than average, a 10" knife may feel just right. It's important to hold the knife in your hand and make sure your knuckles won't be knocking on the cutting board as you chop
- Notice the differences between forged and stamped knives. Stamped knives are punched out of a piece of steel; this makes them much lighter than forged knives. Many people prefer the quality of a forged knife, such as a Wusthof, over a stamped one
- Ask about sharpening. Some knives never need to be sharpened. Some chefs love these and others detest them. Knives with tapered edges tend to be easier to sharpen

04-22-2011- Other Thoughts: As if this needs any more praises, but I will give it nonetheless. Great knife! I was skeptical at first, but using a huge watermelon as a test subject, I saw the difference between this and my current knives. Cuts so easily...loooove it!

03-05-2011- Other Thoughts: I bought this knife eight months ago and have loved it since the day I bought it. When I received it, it was so sharp that it could shave hairs off of my arm. For a stamped blade, it seems very strong and durable. I have not had any problems with rusting or dulling.

02-19-2011- Other Thoughts: As good as it gets. . superb size and shape, superb steel. I've been a woodcarver all my life; I know good knives and I know good steel. This knife, any Victorinox knife, is an outstanding value.

01-07-2011- Other Thoughts: This is one of my favorite knives - and I have quite a collection of them, believe me. It's sturdy, sharpens easily, and seems to contour to my hand when chopping. I'm a faster sous chef for myself and others with this knife. Great price, I might add.
