The Knives Used to Cut Fruit

A well-stocked kitchen will include a knife set that contains different knives for a variety of tasks. Although most knives are generally used for cutting, chopping, slicing and mincing, different models will vary in blade shape, length and purpose. Using the incorrect knife to cut fruit increases the difficulty and mess of such a simple task. For example, cleavers are designed to cut through meat and bones. Due to their large size and broad blade, they can be awkward to handle if slicing small fruit, like kiwi. Fortunately, several knives exist that will cut fruit smoothly and effectively.
Tourne Knife

Also known as a "bird's beak" knife, a tourne knife includes a short blade measuring only 2 to 3 inches in length, curving up at the end. Typically, a tourne knife creates a distinct cut that enhances food presentation. However, use a tourne knife to cut softer fruits, like nectarines, peaches and plums that require delicate handling. Tourne knives are also especially adept at peeling skins and flaws off fruit as well.
Grapefruit Knife

These specialized knives are used to separate the grapefruit peel from the edible fruit. Single-bladed grapefruit knives consist of a curved blade on one end and a serrated blade on the other, with a handle in between. The curved blade separates the peel from the fruit. In contrast, dual-bladed grapefruit knives possess serrated blades on either side of the handle. Dual-bladed styles also include either two closely set blades or one blade with an opening in the middle of it. These blades divide the grapefruit into sections.
Clip-Point Knife

Also known as a "granny" knife, clip-point knives are ideal for removing the skin from fruits and vegetables. This knife possesses a short blade measuring between 3 to 4 inches long. Flat and broad, the blade curves along the bottom and angles into a point that fits neatly beneath fruit skin. Because these knives are smaller than most kitchen knives, they allow more control, especially when handling smaller fruit.

05-03-2011- Other Thoughts: This is such a good knife, like most products made in Japan. <br/>I've had it for more than 2 years now and I haven't had to sharpen it yet. <br/>It cuts just about anything, and the small size and handle shape give you great control for peeling etc. <br/>It handles tomato and bell pepper skin very well considering that it's not serrated. <br/>Definitely recommended!

04-19-2011- Other Thoughts: I bought this knife to bring to work for my lunches. It is a perfect size for a lunchbox and cuts through tomatoes, etc like a hot knife through butter. Make sure you clean the knife before putting it back in its sleeve.

04-06-2011- Other Thoughts: My friend at work had one of these so I searched online and of course they carried it! After getting tired of a regular ole steak knife cutting up the inside of my lunch bag I HAD to buy one of these! It works great but as the previous reviewer states, it is SHARP! Be careful with it...I'm kind of nervous using it at work since I use it to cut up apples!
