Go ahead and get Cat 6 which is for gigabit Ethernet. You are right as to topping out at 100 Mbs. Your router is probably 100 Mbs data transfer. When the N standard comes into being you might reconsider the wireless router because then the speed will be 100 Mbs. The G standard is 54 Mbs is at best signal strength.
If you have Cat5e you really won't notice any difference with Cat6 in most cases! The main differences are that Cat6 has more turns per inch (reduced noise) and heavier copper content. Unless you have a really long line, or one that has some issues, it wouldn't be worth the cost of the cables to change.
Hold the ends of the cables together and look at the 8 colours of wires on each plug. If you see that Pin 1 of one end is the same colour of Pin 3 on the other and Pin 2 is the same colour as Pin 6 on the other end, this is a crossover cable. It is used to connect either two computers together or connect your PC to a router.
