Usage:

Knife sharpening proceeds in several stages, in order from coarsest (most destructive) to finest (most delicate). These may be referred to either by the effect or by the tool. Naming by effect, the stages are:- Sarpening - removing metal to form a new edge. Rough sharpening (using either water stones, oil stones, or medium grits of sandpaper in the scary sharp method of sharpening). Fine sharpening (using the same tools as above, but in finer grits)
- Straightening - straightening the existing metal on the blade, but not removing significant quantities of metal
- Polishing (also called stropping)- giving a mirror finish, but not significantly altering the edge. Polishing may also be achieved by buffing a blade: instead of moving the knife against a flat leather strop loaded with fine abrasive, the knife is held still and a powered circular cloth wheel is moved against the knife
Named by tools, the same three stages are:
- Grinding (on a grinding wheel) or whetting (on a whetstone)
- Steeling, using a honing steel
- Stropping, on a razor strop or buffing on a wheel
How to Sharpen Kitchen Knives:

One of the most annoying things to encounter when cooking is a blunt knife, and this becomes very evident when you try to slice a tomato or dice an onion. A sharp knife is a chef's best friend and therefore it's helpful if you know how to sharpen kitchen knives.
Home sharpening methods include using a sharpening steel, drawing knives across a flat sharpening stone, or using a commercial knife sharpener
Using a Sharpening Steel:- Hold the steel - a metal rod designed for sharpening knives - in one hand
- With the other hand, hold the knife by its handle
- 3Place the knife just under the handle of the steel, with the knife handle touching the bottom of the steel handle
- With the knife at a 10- to 25-degree angle to the steel, hold the steel rod steady and draw the knife blade down the steel
- Repeat several times until the entire cutting surface of the knife has been drawn across the steel on both sides of the blade
Using a Sharpening Stone:
- Use a wet or dry sharpening stone
- Place the stone flat on a stable surface
- Holding the knife by its handle, put the blade at a 10- to 25-degree angle to the stone
- Draw the knife toward you and across the stone
- Repeat process on the other side of the blade
- Using a Commercial Knife Sharpener:
- Review instruction booklet that came with sharpener
- The process usually involves drawing the knife blade through the mechanism toward you until the knife is sharpened. This method is not recommended for fine knives

Since I use diamond cutting tools for Knife Sharpener, I couldn't resist trying this. <br/>Compared to a regular Kitchen Knife Sharpener, this Knife Sharpener has a couple of advantages. 09-29-2011- Other Thoughts: I have owned an array of knife sharpeners, cheap and expensive. Some results were good, some poor and others just ok. I had used oil stones previously with mixed results and electric well rated models that sometimes seemed more damaging then sharpening....to be honest I was gun shy and reluctant to spend more money on sharpening products.

07-28-2011- Other Thoughts: This Kitchen Knife Sharpener is AWESOME! I purchased the Knife Grinder to flatten my Japanese whetstone as well as to use for initial flattening of the back of chisels and refining the bevel. Knife Grinder does both tasks superbly! I really wish I could say more positive but I think AWESOME sums it up well. Do not hesitate to purchase this Cutlery Grinder if you're in the market for a good diamond whetstone.
